  1. Freeze tenderloin prior to prep and partially thaw before slicing paper-thin discs and arranging in a single layer on platter. Sprinkle minced shallot and capers over sliced beef. Lightly drizzle with oil and dust with the herbs, pepper, and salt. Serve with lemon wedges to dress each bite.
